Currant is a small berry, including white currant, red currant and black currant, belonging to the currant genus.

Red Currant: The fruit is usually bright red in color and has smaller particles, about 6 to 8 mm in diameter.

White Currant: The fruit is milky white or light yellow in color, also in the shape of small granules, usually about 6 to 8 mm in diameter.

Black Currant: The fruit is dark purple or black, slightly larger than red and white currants, and has a diameter of about 8 to 12 mm.

Taste and Flavor:
Currant fruit tastes sour and sweet, and the taste varies slightly among different varieties. Red and white currants can be relatively sweet, while black currants usually taste slightly more tart.

Nutritional value:
Currant fruit is rich in vitamin C, antioxidants and other nutrients, which have certain benefits for maintaining good health.

Use:
These berries are commonly used in food processing to make jams, jellies, desserts, pastries, sauces, etc. They can also be used to make drinks or as part of the fruit.

Currants are usually planted in spring or fall to take advantage of cooler climates to their advantage. Spring is mostly from March to April, and autumn is mostly from September to October. Currant seedlings begin to sprout and grow when the soil temperature reaches between about 10°C and 15°C.

Red Currant: Typically harvested in late summer to early fall. Harvest may take place between July and September, depending on local climate and varietal characteristics.

White Currant: Harvest time is similar to red currant, also in late summer to early fall. Harvesting also takes place between July and September.

Black Currant: Black currants are usually harvested later, usually from late summer to early fall. Harvest time is likely between August and October.

When harvested, ripe currants should be of good color and feel soft but elastic to the touch, with the fruit pulling away from the branches relatively easily. Regularly check the ripeness of the fruit to ensure it is picked at the optimal harvest time.
